From pancake to pizza
Harveys Lake woman’s recipe selected for Hungry Jack contest

Late last summer, Mary Anne Salaway of Harveys Lake had more home-grown zucchini than she could give away.
She also had a crowd to help feed, because close to 50 people were about to gather for the annual family Labor Day clambake.

Salaway grew up experimenting in the kitchen, thanks to the influence of her mother, Mary Schuler, “a fantastic cook.”
So it was natural for her to take “a little of this, a little of that” plus one cup of Hungry Jack Original Pancake Mix and three cups of zucchini and improvise a savory pizza topped with caramelized onions.
The zucchini pizza was a hit at the clambake, which was hosted by Salaway’s brother and sister-in-law, David and Linda Schuler, and the recipe later caught the attention of judges in the first Hungry Jack “Use Up the Box Recipe and Essay Contest.” They selected her entry as one of three finalists in the pancake-mix category.

Salaway, an at-home mom who occasionally helps out at the family business, Automobile City Team Effort Cycle in Hanover Township, said she grew up as one of seven siblings, and her husband grew up as one of 10.
“We’re used to entertaining large groups on both sides,” she said, admitting a preference for informal, buffet-style meals.
Her pizza, which she recommends as an appetizer, works especially well at that kind of gathering because it can be served at room temperature.
An avid cook who’s made eating together a family priority, Salaway said she’s passed along her culinary skills to her three children: Maggie, 20, who specializes in all kinds of salads; 17-year-old Kyle who experiments with flavors to the point “he’ll empty my spice cupboard;” and 14-year-old Cathy, who concentrates on baking.
Their dad, Kevin, is “more of a grill guy,” Salaway said.

HUNGRY JACK ZUCCHINI PIZZA WITH CARAMELIZED RED ONIONS
1 cup Hungry Jack Original Pancake Mix
1/2 cup grated Asiago cheese
1/2 cup grated Monterey Jack cheese
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
1 teaspoon Italian seasoning
4 eggs, slightly beaten
1/2 cup canola oil
1 clove garlic, minced
2 tablespoons freshly minced chives
3 cups thinly sliced zucchini (Quarter medium zucchini length-wise, remove any large seeds and thinly slice until equaling three cups)
1 tablespoon butter or margarine
1 medium red onion, thinly sliced
Preheat oven to 350 degrees F. Lightly grease a 10x15-inch jelly roll pan and set aside.
In a large mixing bowl blend together pancake mix, both cheeses, salt, pepper, Italian seasoning. Add eggs and oil to bowl and mix well. Stir in garlic and chives and fold in zucchini. Mix until all are blended. Spread zucchini mixture evenly in prepared pan. In a medium frying pan over medium-high heat fry red onion in butter until onion is soft and lightly browned. Distribute onions evenly over zucchini mixture in pan.
Place pan in center of preheated oven. Bake at 350 degrees F for 20 to 25 minutes until top is lightly browned. Let cool slightly before cutting into 2 and 1/2 x 3-inch serving pieces.
Makes 20 appetizer-size pieces.
